When I was introduced to Shakeology I was a huge skeptic. I was not a fan of shakes and did not believe that any shake could ever taste good or be something I would want to add to my daily diet. The first flavor of Shakeology I tried was chocolate and I was surprised how good it really tasted. It was not nasty like I thought it would be or have some awful aftertaste. It tasted more like a chocolate milk shake, which almost made me feel a little guilty as if I was cheating. Later, I discovered you can bake with Shakeology, put it into puddings, energy bars, and even make ice cream with it.
I decided to experiment with Shakeology and some very ripe avocados to create a chocolaty avocado brownie. The batter tasted just like chocolate cake and the best part was it was healthy! I love to use rich but healthy foods like avocados into my diet whenever I can, because they are a great source of healthy fat, vitamin E, B-vitamins and folic acid. Avocados also have twice the amount of potassium found in bananas. On top of that you add in 72 different super foods found in Shakeology. The result: healthy brownies packed full of nutrition. My experiment was a success. The brownies had no hint of avocado flavor, only the rich dark chocolatey flavor, with a little texture because of the chocolate chips and chopped up walnuts. They were heavenly and my family consumed them before the end of the day.
- 2 medium ripe avocados
- 2 eggs
- 1 tsp vanilla extract
- ½ cup honey or maple syrup
- 2 Tbs olive or avocado oil
- 1 cup almond flour
- 1 cup Chocolate Shakeology. (or your favorite cocoa powder)
- Pre-heat oven at 350/177 degrees.
- In a stand mixing bowl take two medium sized ripe avocados and mash the flesh with a fork leaving no clumps.
- Take your eggs, vanilla extract, maple syrup or honey, and oil and whip those in with the mashed avocados. Mix these ingredients all together until they are smooth.
- Add in the coco powder or Chocolate Shakeology, sea salt, and baking powder mixing until all combined.
- Fold in your chocolate chips and chopped walnuts.
- I used a brownie baking pan first coating with oil and then I spread out the brownie batter evenly.
- Baked the brownies for about 18-20 minutes or until a tooth pick came clean. Let cool and eat.
- These brownies do freeze well and the flavor is better the next day.

Can you use any other flour? I want to try some of your desserts but don’t have almond flour on hand. Hows oat flour?
